Lucien le Moine, located in Burgundy and managed by Rotem and Mounir Saouma since 1999, is known for creating exceptional Burgundy wines. The couple, with roots in Israel and Lebanon, are recognized for their innovative approach and uncompromising quality. Mounir, who studied oenology in Montpellier and worked as a cellar master in Israel, moved to Burgundy in 1995 to specialize in Chardonnay and Pinot Noir. He was hired as cellar master by a major negociant in Burgundy, where he collaborated with some of the most renowned wine producers.

With the establishment of Lucien le Moine, Mounir wanted to acquire top quality wines from selected producers and vinify them in his own cellar in Beaune, using new oak barrels from Burgundy.

Bordering Saint-Aubin, Puligny-Montrachet and Meursault, Chassagne-Montrachet is famous for producing some of the finest white wines in France. It is home to prestigious Grand Cru vineyards such as Criots-Bâtard-Montrachet, le Montrachet and Bâtard-Montrachet. The unique characteristics of the area are due to the special soil, which consists of limestone marl mixed with red gravel.
