The Pinotage grapes used for this wine come from vines that are between 5 and 20 years old, with a production of around 50 hectolitres per hectare. The vinification follows a traditional method, with fermentation taking place in open vats. Stirring is done every two hours and pumping over is done every three days. After the fermentation process, the wine is aged for 14 months in French oak barrels from Nevers. Kadette Pinotage offers a complex aroma of raspberries and plums. The taste is refined with notes of fruity sweetness, mocha and a hint of leather. The wine finishes dry with a long aftertaste and a good tannin structure. It can be aged for 4-5 years. Perfect to serve with poultry, veal, pork, pasta dishes, ratatouille or spicy dishes with Asian inspiration.
