François Carillon et Fils Cap au Sud 2021

In 2021, Domaine François Carillon faced a challenging vintage due to late spring frosts that reduced yields. In order to deliver wines to their customers, Carillon chose to source grapes from the South of France, leading to the creation of the "Cap au Sud" wines under the Vin de France classification.

The Chardonnay grapes for this wine come from an area north of Nîmes, near Montagnac. Here, there are clay and limestone slopes that are perfect for growing Chardonnay. The vines were planted in 1990 on slopes at an altitude of 250 meters.

Upon arrival in Puligny-Montrachet, the wine undergoes fermentation in traditional Burgundy barrels (20% new), followed by malolactic fermentation and a maturation period of 11 months. The wine is then blended in steel tanks and rested before bottling.

The wine presents itself with a golden color and an aroma of butter, wild flowers, lime, peach and tropical fruits. It is dry with a structured aftertaste that complements the exotic notes. A harmonious and intense Chardonnay from the South of France with the characteristic quality of Carillon.

It is ideal for fish or shellfish dishes and poultry in white sauce. Should be served chilled, but not ice cold.
