Ellis' Whitehall Chardonnay is made from grapes from its own vineyards in Elgin, where the south-facing slopes create cool growing conditions. The soil, which consists of quartz and sandstone, contributes to the elegant and crisp character of the wine. The grapes are pressed with a vertical press, and only the first pressing is used. The must is fermented in 228 liter wooden barrels, of which 70% are 1-2 years old, while the rest are new. Approximately 20% of the wine undergoes malolactic fermentation and is then matured in the same French barrels for nine months.
Chardonnay Whitehall offers a delicate aroma with hints of vanilla, nectarines, lime and white peaches. The taste is fresh, crisp and elegant with an appealing fruity sweetness. The wine finishes with a combination of freshness, body and charming green notes. It is perfect with fish, shellfish, pasta or risotto with white meat.
