Kanonkop Estate Wine, Paul Sauer 2020
Paul Sauer is the prestigious wine from Kanonkop, composed of 76% Cabernet Sauvignon, 17% Cabernet Franc and 7% Merlot, grown in Simonsberg, Stellenbosch. The vines have an average age of 29 years, and the soil is a mixture of granite, sand, silt and a little clay. The wine is fermented in open vats and aged for 24 months in new French barriques.
A warm winter and spring led to early bud burst, while rain during flowering reduced yields. The dry and warm late summer with cool nights produced grapes with a rare aroma, concentration and acidity. Paul Sauer 2020 presents a deep ruby red colour with aromatic notes of blackcurrant, plum, spices, tobacco and cedar. The taste is both delicate and intense, with a beautiful integration of woody notes and tannins. This vintage has great potential for ageing (20-25 years) and is ideal with dishes such as duck, lamb, game or beef. Make sure to give the wine good aeration before serving.
