Kanonkop is one of the most renowned wineries in South Africa, famous for having won the award for the world's best red wine four times at the International Wine and Spirit Competition. In 2008, winemaker Abrie Breeslar was honored as the world's best winemaker.

Paul Sauer 2021 represents Kanonkop's flagship wine, composed of 62% Cabernet Sauvignon, 25% Cabernet Franc and 13% Merlot, grown in Simonsberg, Stellenbosch. The vines have an average age of 28 years, and the soil is a mixture of granite, sand, silt and clay. Some of the vineyards are cultivated as "dry land", while others receive additional water. The wine is fermented in open vats and aged for 24 months in new French oak barrels.

A warm and dry winter, combined with ideal weather conditions during the harvest, resulted in grapes with optimal ripeness. Paul Sauer 2021 presents itself with a deep ruby ​​red color and a complex aroma of blackcurrant, plum, spices, tobacco and cedar. The palate is rich in fruit with notes of red and dark berries, and the wine exhibits a perfect balance between finesse, structure and softness. It has a significant aging potential of 20-25 years.
