The wine is composed of 55% Corvina and Corvinone, 30% Rondinella and 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese grapes. After harvest, the grapes are immediately pressed and fermentation begins after 7-8 days of maceration. The wine is stored in steel tanks until February, when it is transferred to the grape residues from the Amarone production. This initiates a new fermentation, enriching the wine with aromas and flavors from the Amarone grapes. The wine is then matured in Slovenian oak barrels for 7 years.
The wine is ready to be enjoyed now, but will develop significantly with 5-10 years of aging. It offers a unique minerality, cherry flavors and a slight bitterness from cherry stones, which are characteristic of Quintarelli's red wines.
