Kanonkop is one of the most renowned wineries in South Africa, renowned for creating world-class red wines. In 2008, winemaker Abrie Breeslar was honored as the world's best.

Paul Sauer 2016 represents Kanonkop's flagship wine, composed of 62% Cabernet Sauvignon, 25% Cabernet Franc and 13% Merlot, all grown in Stellenbosch. The vines are 28 years old and the soil is a mixture of granite, sand, silt and clay. Some of the vineyards are cultivated as "dry land", while others receive additional water. The wine is fermented in open vats and aged for 24 months in new French oak barrels.

The 2016 vintage was characterised by a warm and dry winter, with ideal conditions during the harvest, which gave the grapes optimal ripeness. Paul Sauer 2016 presents a deep ruby ​​red colour and a complex aroma of blackcurrant, plum, spice, tobacco and cedar. The palate is rich in fruit with both red and dark berries, and the wine exhibits a perfect balance between finesse, structure and softness. It has an ageing potential of 20-25 years.
