Palladius white wine from Eben Sadie originates from some of the oldest vineyards on the Paardeberg mountain in the Swartland. Here, grapes such as Chenin Blanc, Grenache Blanc, Clairette Blanche, Viognier, Chardonnay, Roussanne, Semillon and Palomino Fino are grown on old bush vines in soil rich in gravel and granite.
The grapes are picked early in the morning, carefully sorted and pressed in a traditional basket press. The wine undergoes fermentation and maturation in clay amphorae, French oak barrels and 600-liter concrete vats. It is not filtered before bottling.
After 1-2 hours in a carafe, the wine unfolds with aromatic notes of lemon, almond, peach, yellow flowers and limestone. The taste is intense and well-balanced with perfect acidity and mineral undertones.
