Shaya "Habis" 2019
is a concentrated and complex white wine from Rueda in central Spain – an area known for its signature Verdejo grape . This wine is the flagship of Bodegas Shaya and is made from very old vines, which deliver low yields but great intensity.

Flavor profile:

Color: Golden with greenish tinge

Aroma: Very aromatic – ripe pears, citrus, peach, anise, toasted almond and a distinct mineral note

Taste: Full-bodied and creamy in the mouth with layers of fruit, spice and subtle oak character. An elegant balance between freshness and fullness

Aftertaste: Long and complex with notes of honey, herbs and chalky minerality

Grapes and vinification:

Grape: 100% Verdejo from over 100 year old, free-standing vines

Ageing: Fermented and aged in French oak barrels (partly new) with bâtonnage (stirring of the lees) for up to 8 months

Alcohol: Approximately 14%

Food pairing:

Perfect with rich fish dishes (such as cod in butter or cream sauce), shellfish, grilled vegetables, chicken, mushrooms and firm cheeses. Can also stand alone as a "meditation wine".
