Quinta Sardonia has chosen fresh and light soils in the Duero Valley that promote aromatic grapes with good acidity. The grapes are picked and sorted by hand, and the wine is aged in three different types of barrels for 6 months, followed by 6 months in concrete tanks to highlight the fresh, fruity taste.

Founded by Peter Sisseck, Quinta Sardonia is now managed by Jerome Bougnaud. The winery is located in Sardon del Duero and practices biodynamic cultivation. The grape varieties used include Tempranillo, Cabernet Sauvignon, Merlot, Syrah, Petit Verdot, Cabernet Franc and Malbec.
