Pinot Noir Carpe Diem from Domaine Anderson in Anderson Valley, California

Pinot Noir Carpe Diem is created from grapes from carefully selected plots on Roederer’s Anderson Valley estates. To preserve the freshness of the grapes, they are harvested at night and destemmed immediately upon arrival at the winery. Each plot is fermented separately for approximately 12 days using the grapes’ natural yeasts in both steel tanks and small French oak barrels. The wine is pressed in small, vertical wooden presses and then transferred to 228-liter Burgundy barrels, 12% of which are new. After a slow malolactic fermentation through the winter and spring, the wine matures in the same barrels for 10 months. Before bottling, the wines from the different plots are blended and lightly filtered.

Pinot Noir Carpe Diem presents a deep ruby ​​red color with aromas of blackcurrant, dark cherries, plums, cedar and vanilla. The palate is well-balanced and fresh with notes of freshly picked berries, forest floor, exotic spices and black pepper.

It is ideal for serving with veal, beef or lamb, especially when accompanied by wild mushrooms. It also goes well with cheeses such as Asiago and Manchego.
