Ferrabrut is an exquisite sparkling wine, consisting of 90% corvinone and corvina, 8% garganega, and 1% each of malvasia and moscato. The grapes are hand-picked, destemmed and gently pressed, after which the first fermentation takes place. The wine matures in steel tanks together with the grape skins until March, when it is bottled and undergoes a second fermentation. After 5 years with the yeast residues, the wine is ready to be enjoyed. Production is limited to around 100 cases per year. It has a golden color with a fine mousse. The taste is fresh and aromatic with floral notes, citrus, hawthorn, pear and honey. It is semi-dry, intense and fresh with a slight sweetness in the aftertaste. Best served at 6-8 degrees. Ideal with seafood, light fish dishes or as an aperitif. Ferrabrut is a personal project of Carlo Ferragu and is an example of high-quality sparkling wine.
