Dominio De Pingus, Pingus 2017

Danish winemaker Peter Sisseck is famous for his iconic wine, Pingus, from Dominio de Pingus in Ribera del Duero, Spain. Sisseck has transformed the winery by implementing modern techniques, resulting in a perfect score of 100 points from renowned wine critic Robert Parker. This recognition has significantly increased the value of the wine, and select vintages can now cost over 10,000 kroner per bottle.

Pingus is matured in new oak barrels, but the intense fruit flavour ensures that the woody notes do not dominate. Sisseck only produces around 6000 bottles annually, and the price is between 5000 and 10,000 kroner. Another wine from the vineyard, Flor de Pingus, is not a secondary wine to Pingus, as it is made from grapes from different fields and vinified separately.

Sisseck's principles for winemaking include: use of old vines on south-facing slopes, use of local Tempranillo grapes, low yields, strict selection of grapes, manual destemming, small fermentation tanks, relatively cool fermentation, use of new oak barrels, and no fining or filtering of the wine.
