He uses a low-intervention approach to winemaking, avoiding the use of new oak barrels to allow the wines to reflect their origins.

Domaine Pierre-Olivier Garcia's Nuits-Saint-Georges "Les Herbues" 2021 is a red wine made exclusively from Pinot Noir grapes from the "Les Herbues" vineyard in Nuits-Saint-Georges, Burgundy. This vineyard, located near the border with Vosne-Romanée, is known for its sandy silt soil with eroded limestone, which gives the wine a mineral character.

Pierre-Olivier Garcia uses a meticulous vinification method called "baie-par-baie" (berry by berry), where the grapes are manually destemmed to preserve their quality. In the 2022 vintage, this technique was used on 80% of the grapes, creating a wine with a light and almost ethereal mouthfeel.

The wine has soft tannins, notes of dark cherries and strawberries, a medium tannin content and moderate acidity. It goes well with dishes such as beef, veal, poultry and game such as deer or venison.
