Created from grapes grown in four different vineyards, this wine offers a refined minerality with notes of lime citrus, sourdough and cinnamon. The pronounced minerality contributes to a refreshing acidity and indicates excellent aging potential. The aroma is characterized by wild white flowers such as frangipani and almond blossom, which are also tasted on the palate. The aim is to produce elegant wines.
Grape composition: 100% Chardonnay
Food pairing: Perfect for dishes such as paella, quail and pork.
Harvest method: The Chardonnay grapes are hand-picked with a sugar content between 22 and 25 Brix to achieve a wide range of flavor nuances.
Vinification: Fermented in barrels with natural yeasts. 30% undergoes malolactic fermentation. Aged for ten months in French oak; 10% new French oak, 35% second filling French oak, 45% third filling French oak, 10% in concrete oak.
