McLaren Vale in South Australia is famous for its full-bodied Shiraz wines, as well as Cabernet Sauvignon, Grenache and Merlot. The region is just 10-15 km from the coast and benefits from a cooling sea breeze, although the hot climate can make winemaking challenging. The different soil types in sub-regions such as Sellicks Foothills and McLaren Flat contribute to the diversity of the wine.

Established in 1979 by David Paxton, Paxton Vineyards is one of the leading producers in McLaren Vale. The winery has converted to biodynamic farming and grows Grenache, Cabernet and Shiraz using both traditional and modern methods. Their Cabernet Sauvignon is made from grapes from organic and partly biodynamic vineyards. The grapes are hand-harvested to ensure the best balance of flavours, and the wine is matured in both new and used French oak barrels before being bottled without filtration.

This Cabernet Sauvignon presents a deep ruby ​​red colour and an aroma with spicy and fruity nuances. The palate is elegant with a harmonious integration of cask ageing and fruit, making it suitable for both immediate enjoyment and ageing.
