"Op Sy Moer" is a unique natural wine that combines Palomino (49%) and Chenin Blanc (51%) grapes from Piekenierskloof. The cool climate and the soil, which consists of sandstone and limestone, contribute to the aromatic and delicate profile of the wine. Winemaker Warren Ellis is behind the process, where the grapes are pressed whole, and the must is allowed to macerate coolly for three days. Fermentation occurs spontaneously in steel tanks without the addition of sulfur, and the wine matures "sur lie" for several months. It is bottled without filtration, which may cause some sediment or crystals in the bottle. The wine presents itself with a light golden color and a greenish tinge, while the aroma offers notes of citrus fruits, peaches, green apples, ginger, grapefruit and passion fruit. The taste is dry, crisp and harmonious with a good balance between fullness and freshness. It is ideal for dishes with vegetables, seafood and fish.
