Paul Sauer is the prestigious wine from Kanonkop, located in Simonsberg, Stellenbosch. It is composed of 76% Cabernet Sauvignon, 17% Cabernet Franc and 7% Merlot. The vines have an average age of 29 years, and grow in soil consisting of granite, sand, silt and a little clay. The vinification follows a classic method with fermentation in open vats and stirring every two hours, followed by 24 months of aging in new French oak barrels.

The 2017 vintage is renowned for its deep ruby ​​red hue and complex aromas of blackcurrant, plum, spice, tobacco and cedar. The palate is both delicate and intense, with a beautiful integration of woody notes and tannins. This vintage has a 20-25 year ageing potential and is an excellent choice for dishes with duck, lamb, game or beef. Be sure to give the wine plenty of time to aerate before serving.
