Hacienda Monasterio is known as one of the finest wines in the region, thanks to a low harvest yield. The wine is typically composed of 80% Tempranillo, 15% Cabernet Sauvignon and 5% Merlot, although this blend can vary. It is aged for up to 24 months in small barriques, 33% of which are new.
About 14,000 cases are produced annually, which corresponds to approximately 21 hl/ha. High quality requirements are set, and a careful selection is made for the final blend. Before selection, the yield is normally 26 hl/ha. After fermentation, part of the wine remains in the marc, but only 5% of this is used in the final wine. A full 95% of the wine runs naturally from the fermentation vat.
The low yield is due to the limited water supply and nutrient content of the soil, which requires a large distance between the vines. Tempranillo is mainly grown in the traditional bush form, which results in a low yield per vine and per hectare.
