Domaine François Carillon Bourgogne Côte d'Or Pinot Noir 2023 is an elegant and well-balanced red wine from the heart of Burgundy, created by one of the region's most renowned producers. François Carillon is based in Puligny-Montrachet , where the family has been growing wine since the 16th century, and the vineyard is particularly known for its precision and respect for the terroir. Although the house is most famous for its white wines, this Pinot Noir shows that Carillon also masters the red Burgundy style to perfection.
The wine is made from 100% Pinot Noir , grown on fields in the Côte d'Or , primarily around Puligny and Chassagne-Montrachet, where the soil consists of lime and clay - ideal conditions for creating Pinot Noir with both finesse and structure. The grapes are hand-harvested, carefully sorted and fermented with natural yeast strains. The wine is then aged in French oak barrels for around 12 months , a small part of which are new, to preserve the freshness and pure character of the grape.
In the glass, the wine presents itself with a clear, ruby red color . The aroma is seductive with notes of fresh cherries, raspberries, wild strawberries and a touch of violet , complemented by subtle notes of light spice, toasted oak and forest floor .
The palate is fine and silky , with a juicy red fruit core and elegant tannins. The acidity is lively and well-integrated, giving a fresh, mineral and persistent finish . It is a wine that balances fruitiness and complexity - classic Burgundy at its best.
