About the Cape Winemakers Guild (CWG):
Every October, the prestigious CWG Auction is held in Spiers/Stellenbosch. Guild members have the opportunity to showcase one or two unique wines created especially for this event to demonstrate their winemaking skills and promote South African wine. The auction is highly regarded in the wine world, attracting wine enthusiasts and collectors globally who want to acquire the finest South African wines. These wines are produced in limited quantities and most remain in South Africa, making them rare in Europe, apart from those we acquire at the CWG.

Composition: 70% Cabernet Sauvignon, 15% Cabernet Franc, 15% Merlot

Origin: Simonsberg-Stellenbosch

The vineyards are strategically placed next to each other on the lowest part of the property. The grapes are destemmed, sorted and fermented in open top vats for 6 days. After the malolactic fermentation in the tank, the blend is assembled and the wine is then aged for 24 months in 100% new French oak barrels.

Tasting notes : The wine offers characteristic floral aromas, typical of a young Paul Sauer. The oak is harmoniously integrated, adding depth and complexity. The finish is characterized by a pleasant dryness and a persistent aftertaste.
