Bouchard Finlayson Galpin Peak 2021

The grapes for this Pinot Noir come from Galpin Peak in the Hemel-en-Aarde Valley. Here, the vineyards are densely planted with 9,000 vines per hectare, resulting in more concentrated grapes. Around 35% of the grape bunches are removed during the green harvest to ensure that only the best bunches ripen. The harvest is carried out manually in up to three rounds to achieve optimal ripeness. Fermentation takes place in steel tanks with the grapes' natural yeast cells, after which the wine is transferred to French oak barrels (30% new) for malolactic fermentation and maturation for 11 months, followed by a natural settling period of 5 months.

The Hemel-en-Aarde Valley offers the perfect terroir for Pinot Noir. The wine offers aromas of cherries, plums and blackberries. The palate is structured and minerally, complementing the fruit sweetness and velvety texture. The aftertaste has dark nuances reminiscent of a Pommard from Burgundy. This characterful and harmonious Pinot Noir is ideal with poultry, veal, lamb, game birds and white or red cheeses.
