Adeline Cap Classique Blanc de Blancs 2011 is a wine created as a tribute to a beloved mother and grandmother by her son. This sparkling wine from the Elgin region is known for its refined elegance and refreshing character.
Wine production
The grapes were carefully hand-picked in February at 17.5 °B, with an acidity of 12/l and a pH value of 2.9. After a traditional pressing and fermentation in barrel, the wine was matured for 6 months and then aged for 10 years on the lees before disgorging. Only a minimal amount of dosage was added and the production is limited.
Tasting notes
The wine presents a complex aroma of lemon and pear, with a harmonious balance between crisp acidity and minerality. Delicate notes of brioche complete the taste experience.

Ideal for serving with oysters, smoked salmon, pan-fried scallops and sorbet.
